1 lb Ground Veal 1 lb Ground Beef 1 lb Ground Pork 1 Large Onion 2 Large Carrots 2 Ribs Celery 1/4 cup Garlic Cloves (peeled) 1/8 cup Calabrian Chili (whole) 1/8 cup Chopped Oregano (fresh) 1/2 bottle Dry Red Wine 4 ounces Demi Glace 20 ounces Whole Milk 1 cup Beef Stock 1 tbs coriander (ground) 1 tbs fennel seed (ground) 1 tsp cumin (ground) Grind or finely mince vegetables including garlic and chilis Sear meat in a wide flat bottom pan till brown with a neutral oil Add ground vegetables, oregano, and spices, and continue to cook until the pan is almost dry Add milk, demi-glace, and stock Reduce heat to medium-low, and cook for at least 1 hour stirring frequently: 2 hours is better
